The Cork Fork is a happy place to obsess, rant and rave about all things food. My name is Fíona, and as the title suggests I hail from Cork. But before I delve any deeper, I want to let you know that I’m so glad you’ve ended up here, and I really hope you enjoy cooking some of my recipes.

Growing up I was surrounded by interesting and adventurous foods, but I dared not let anything more out-there than a mango pass my lips. My mom was a vegetarian and yet I couldn’t swallow a single chickpea without gagging. Fast forward to my late teens, and I’m staying with a friend in rural Spain for a week. She prepares nothing but a cold chickpea salad for lunch EVERY. SINGLE. DAY! Yet despite my initial horror, I emerged from the week unscathed and with a new found love for chickpeas and giving ‘yocky’ foods a second chance.

The majority of my much loved ‘hippy foods’ have thankfully become a lot more mainstream in the last few years, yet a lot of people seem to have no idea how to cook or eat them outside of the latest hipster pop-up. With The Cork Fork, I hope to demystify some of these delights, so that even your ‘meat-and-two-veg’ Nana can enjoy them!

Trying to describe my cooking is something I find quite challenging. I’m not a strict vegetarian (yet!), and I’m certainly not vegan. I definitely consume far too much sugar, and enjoy every minute of doing so, but I love eating healthy foods just as much. You could pretty much find anything on my fork – except a mushroom dipped in goat’s cheese. That’s where I draw the line.

So I hope that there is something for everyone to be found in my recipes. A lot of them can easily be adapted to suit your dietary decisions. Most of all, please don’t be afraid to play around with and tweak these recipes to suit your taste – I don’t think I’ve ever followed a recipe exactly, and I haven’t poisoned anyone to date, that I know of!

Finally, a massive ‘go raibh maith agat’ to all of my friends and family who have helped put The Cork Fork together. Without you to cook for, I would never have discovered my passion.
